Ingredients:
- Carrot 2 medium (150g)
- Milk 4.5 cups
- Corn flour 2 tbs
- Sugar 7 tbs (105g)
- Vanilla essence 1 tsp
- Cardamom powder 1/4 tsp
- Basil seeds 1 tbs
- Cashew 2 tbs
Method
- Add the grated carrot into a pan
- Cook this along with 1/2 cup of milk for about 5 minutes
- Add the sugar and cook till the water content reduces
- Add 3.5 cups of milk and bring to a boil
- Add cardamom powder and vanilla essence
- Meanwhile combine corn flour with 1/2 cup of milk and mix without any lumps
- When the carrot - milk mix begin to boil add the corn flour slurry little by little and stir well
- Turn off the gas when it begin to boil
- To this add soaked basil seeds and cashews
- Refrigerate for 1 hour
- Delicious carrot drink is ready to serve.
