Amazing Carrot Dates Cake Recipe


Amazing Carrot Dates Cake
 Ingredients:
  • maida /all purpose flour - 1 cup ( 140 g )
  • baking powder - 1 tsp ( 4 g )
  • salt - 1/4 tsp
  • grated carrot  - 1.5 cups ( 140 g )
  • chopped dates - 1/4 cup ( 30 g )
  • chopped cashews - 1/4 cup ( 30 g )
  • cinnamon powder - 1 tsp
  • eggs - 2 ( 100 g )
  • sugar - 1/2 cup ( 100 g )
  • oil - 1/2 cup ( 90 g )
  • vanilla essence - 1/2 tsp
 for the caramel 
  • sugar - 4 tablespoons ( 60 g )
  • hot water - 4 tablespoons ( 60 ml )
 Method
  • to prepare the caramel, add the sugar into a sauce pan and cook on medium heat until the sugar dissolves
  • swirl the pan often to ensure even distribution of heat
  • gradually the color will become dark brown
  • when it begin to froth , reduce the flame and add pour hot water slowly to melt the caramel
  • turn off the heat and allow it to cool 
  • to prepare the dry ingredients mix together flour, baking powder and salt
  • to prepare the wet ingredients beat together eggs and sugar until creamy
  • then add oil, vanilla and prepared caramel
  • mix well
  • now mix together carrot, dates, cashews  and cinnamon powder
  • add half of the flour mix and carrot mix into the egg mixture and fold in gently
  • then add the remaining flour mix and carrot mix and fold in gently
  • pour this into a 7 inch square tin lined with parchment paper
  • tap the pan 
  • bake in a preheated oven at 170 degree Celsius for 40 minutes
  • then take out from the oven and remove from the tin
  • allow this to cool down completely
  • the flavor  develops as it sits
  • then slice it and enjoy!!

3 Ingredients Butter Cookie Recipe


Butter Cookies
 Ingredients :
  • sugar - 50 g ( 3 tbs + 1 tsp )
  • butter - 100 g ( 1/2 cup )
  • maida / all purpose flour - 150 g ( 15 tbs )
 Method
  • cream together butter and sugar until pale and fluffy
  • add the flour in 2 batches and combine gently
  • make small balls from the dough and press gently with the palms
  • arrange them on a baking tray lined with baking paper
  • bake in a preheated oven at 180 degree Celsius for 25 - 30 minutes ( baking time may vary depending on the type of oven )
  • the cookies will be soft when just out of oven, but will become crisp as they cool

Christmas Fruit Bread Recipe


Fruit Bread 

 Ingredients :

 For the dough

  • maida /all purpose flour - 2 1/2 cups ( 350 g )
  • warm milk - 220 ml
  • sugar - 3 tbs ( 45 g )
  • butter - 3 tbs ( 45 g )
  • instant yeast - 1 tsp ( 4 g )
  • salt - 1 tsp ( 7 g )

 For fruit mix

  • tutti frutti ( candied papaya ) - 1/4 cup ( 30 g )
  • black raisin - 1/2 cup ( 60 g )
  • golden raisin - 1/4 cup ( 25 g )
  • glaced cherry  - 1/2 cup ( 60 g )
  • cardamom powder - 1tsp
  • cinnamon powder - 1/2 tsp
  • nutmeg powder - 1/4 tsp
  • pine apple essence - 1/4 tsp
  • vanilla essence - 1tsp
  • orange zest - 1 tbs

 Method

  Prepare dough

  • mix all the ingredients for dough and knead for 6 - 7 minutes
  • transfer into a greased bowl
  • cover and let it rest until double in size
  • when it is ready gently press and degas the dough
  • combine together all the ingredients for fruit mix
  • incorporate the fruit mix with the dough in batches
  • then shape this into a rectangle
  • further roll it into loaf shape
  • transfer into the greased loaf tin ( tin size 8 x 4.5 x 4 inches )
  • cover and rest until almost 80% of the tin is full ( around 75 minutes )
  • now brush the top with egg or milk

 Baking

  • bake this in a preheated oven at 190 degree Celsius for 40 - 45 minutes 
  • if the top become more brown before completing the baking, cover the top with an aluminum foil to prevent over browning
  • make sure that the bread is perfectly baked; under baked bread will have yeasty flavor.

 Cooling

  • once baked, take it out from oven
  • remove from the tin and allow it to cool down completely
  • the flavor develops as it sits
  • it it better to cut it on the next day
  • then slice and enjoy !!

Perfect Milk Mysore Pak Recipe | Soft Mysore Pak recipe


Mysore pak 
 Ingredients
  • milk powder - 100 g ( 10 tbs )
  • maida - 2 tbs (20 g )*
  • sugar - 300 g ( 1 1/2 cups )
  • ghee - 150 g ( 1/2 cup + 2 tbs )
  • oil - 150 g ( 1/2 cup + 2 tbs )*
 Method
  • grease a 5x5 pan and line with parchment paper
  • in a bowl mix together milk powder, maida and 3/4 cup of ghee - oil mix
  • add sugar into a heavy bottomed vessel
  • add 3/4 cup of water
  • turn on the flame and stir until the sugar get dissolved
  • now allow it to boil until it reaches one string consistency (boil for about 5 minutes on medium heat )
  • you can check the stage of sugar syrup by dropping it  in a bowl of water; when you drop a little syrup, if it dissolve immediately ,continue boiling; if the drop of sugar syrup settles at the bottom of bowl ,it is the correct stage.
  • when the sugar syrup is ready add the milk powder - ghee mix in it and stir well until bubbles appear
  • divide the ghee oil mix into 4 portions and add 1/4 portion of ghee - oil mix and stir well
  • stir until the ghee get absorbed
  • again add 1/4 of ghee - oil mix and stir until it got absorbed
  • again add 1/4 portion and stir well
  • now stir until the mix got a light golden shade ( about 5 minutes )
  • now turn off the heat and add the remaining ghee - oil mix
  • stir again for 2 minutes until 
  • now transfer into the prepared tin and level the top
  • allow it to cool completely at room temperature
  • when it is cool slice it and enjoy!
Note :
  • instead of maida you can use roasted besan
  • you can make this exclusively with ghee

Cotton Soft Swiss Roll Recipe | Jam Roll Recipe


Swiss Roll
 Ingredients
  • eggs - 4 ( separate whites and yolks )
  • all purposeflour / maida - 3 tbs ( 30 g )
  • corn flour - 3 tbs ( 30 g )
  • sugar - 5 1/2 tbs ( 80 g )
  • oil - 2 tbs ( 30 ml )
  • milk - 2 tbs ( 30 ml )
  • salt - a pinch
  • vanilla essence - 1 tsp ( 5 ml )
  • lemon juice - 1 tsp ( 5 ml )
 Method
  • line a baking tray ( size - 14 inches x 11 inches ) with parchment paper
  • preheat oven at 180 degree Celsius
  • take the egg whites in a large clean dry bowl
  • add salt and lemon juice
  • beat the whites ; when begin to froth start adding sugar ( powdered 40 g ) in batches
  • continue beating until the whites reach stiff peaks and keep aside ( this is called meringue )
  • combine the remaining sugar ( 40 g ) , egg yolks, vanilla, oil and milk
  • combine flour, corn flour and salt and sift into the yolk mixture
  • now add the meringue into this mixture in 3 batches; mix gently after each addition
  • pour this on to the prepared tray and level it evenly
  • tap 4-5 times to remove large air bubbles
  • bake in the preheated oven at 180 degree Celsius for 30 - 35 minutes ( baking time varies depending on the type of oven )
  • when it is baked, remove from the oven
  • tranfer on to a wire rack cover with a sheet of baking papaer and flip the cake
  • now peel off the baking paper which was used while baking and allow it to cool for 15minutes
  • then apply jam  ( or any desired filling ) over it
  • now roll it and keep aside for atleast 30 minutes
  • after 30 minutes of rest cut it and enjoy :)

Bazlama Turkish Flatbread Recipe | Pita Bread Recipe


Bazlama
 Ingredients :
  • all purpose flour / maida - 500 g
  • instant yeast - 1 tsp
  • warm milk - 150 ml ( 1/2 cup + 2 tbs )
  • warm water - 150 ml ( 1/2 cup + 2 tbs )
  • sugar - 1 tbs ( 15 g )
  • olive oil - 1 tbs ( 15 ml )
  • salt - 1 tsp ( 8 g )
  • to brush on top - melted butter, coriander leaves , chilly flakes
 Method
  • combine milk, water, yeast and sugar
  • add flour and then salt
  • mix everything very well and knead for 1- 1 1/2 minutes
  • add oil and knead until combined well
  • cover and keep aside until double in size
  • then degas the dough and divide into 6 pieces
  • shape them into balls
  • roll out each balls into a circle of 1/4 inches thickness
  • cook them on hot skillet on medium heat
  • brush butter on top and sprinkle chopped coriander leaves and chilly flakes

Homemade Milky Bar
 Ingredients :
  • milk powder - 50 g
  • sugar - 50 g
  • butter - 20 g
  • vanilla essence - 1 tsp (optional )
 Method
  • heat the sugar along with 2 tbs water 
  • when the sugar dissolves add vanilla essence
  • boil the syrup until it reaches the 'gathering stage.'
  • to check the consistency drop a little sugar syrup in a bowl of water;if it settles at bottom and you can gather it with your fingers, it reached the disired consistency (gathering stage).
  • now add butter and let it dissove completely
  • next add the milk powder in two batches and stir  until combined well;it is better to use a silicon spatula at this time
  • quickly transfer the mix into a chocolate bar mould and allow it to cool completely
  • it will set within 20 minutes at room temperature
  • now you can enjoy the easy homemade sweet.
