Wheat Cheesy Garlic Bread


 Ingredients :

  for the dough


  • wheat flour - 1 cup
  • plain flour - 1/2 cup
  • salt - 1/2 tsp
  • finely chopped garlic - 1 tsp
  • oregano - 1 tsp
  • active dry yeast - 1/2 tsp
  • sugar - 1 tsp
  • oil - 1 tbs

  for stuffing


  • soft butter - 2 tbs
  • finely chopped garlic - 2 tbs
  • salt - 1/4 tsp
  • chilly flakes - 1 tsp
  • oregano - 1 tsp
  • mozzarella cheese - 3 tbs
  • cheddar cheese - 3 tbs

 Method

  step 1 : prepare dough

   a) activating yeast

  • into 1/2 cup of warm water add in yeast and sugar
  • mix well and keep aside until frothy
  • it may take around 10 - 12 minutes
   b) making dough

  • into a mixing bowl add in all the ingredients listed under for the dough
  • mix well and make a sticky dough
  • you may need to add 2 - 3 tbs of warm water to get a sticky dough
  • knead the dough for 10 minutes until the dough is smooth 
  • apply a few oil on the dough 
   c) proofing
  • cover with a cling wrap and keep in a warm place until the dough is double in size
  • it may take around 2 hours
  • when it is ready, punch the air out
  • allow the dough to rest for another 10 minutes
  d) prepare stuffing

  • mix together butter, garlic, chilly flakes and salt
  • set aside the cheese
   e) shaping

  • place the dough onto a lightly floured surface
  • roll out this into a circle of approx. 1/2" thickness
  • brush the butter - garlic mixture evenly
  • add in the cheese
  • fold it from one end to form a semi circle
  • transfer into a baking tray
  • brush butter generously all over
  • sprinkle chilly flakes and oregano
  • make marks all over without cutting them fully

 step 2 : baking

  • bake in a preheated oven at 200 degree Celsius for 20 - 25 minutes
  • and finally delicious homemade cheesy garlic bread is ready
  • cut them into sticks and serve

Easy Lemon Cake Recipe | Whole Wheat Lemon Cake



Whole Wheat Lemon Cake

 Ingredients :


  • wheat flour - 1 cup
  • baking powder - 1tsp
  • salt - a pinch
  • butter at room temperature - 1/2 cup
  • sugar - 3/4 cup
  • eggs - 2
  • lemon zest - of 2 large lemons
  • curd/yogurt - 2 tbs

 Method :



  • Mix together wheat flour, baking powder and salt. Keep this aside.
  • cream together butter and sugar until pale yellow
  • add in the eggs one at a time and beat until well combined
  • add in lemon zest and combine well
  • sift in the flour mix
  • fold in gently;avoid over mixing
  • add in curd and mix gently
  • transfer this cake batter into a cake tin which is lined with parchment paper
  • bake this in a preheated oven at 180 degree Celsius for 45 - 50 minutes or until a toothpick inserted at the centre came out clean 
  • brush the top with lemon syrup
  • cut the cake when it is completely cool

to make lemon syrup :



  • mix 3 tbs sugar, 1 tbs lemon juice and 1/4 cup of water;boil this until get a syrup consistency.

 to zest the lemon :



  • grate the yellow part of lemon skin

Egg Dum Biryani Recipe | How To Make Easy Egg Dum Biryani At Home



Egg Dum Biryani

 Ingredients :

  for masala


  • hard boiled eggs - 4
  • carrot chopped - 1cup
  • capsicum chopped - 1/4 cup
  • onions - 4
  • ginger - 1" piece
  • garlic cloves - 4-5
  • green chilly - 4
  • curry leaves  - 1 spring
  • tomato - 2
  • coconut milk - 1 cup
  • fennel seeds - 1 tsp
  • coriander powder - 1 tbs
  • chilly powder - 1/2 tbs
  • pepper powder - 1 tsp
  • garam masala - 1 tsp
  • turmeric powder - 1/2 tsp
  • coriander leaves & mint leaves
  • salt to taste

 for rice



  • biryani rice (I used jeerakasala) - 3 cups
  • whole spices :- 4 cloves, 1" cinnamon, cardamom 3 -4
  • lemon juice - 1 tbs
  • ghee - 2tbs

 for garnishing



  • onion 2 thinly sliced
  • cashews - 50g
  • raisins - 25g

Method


 step1 : prepare toppings


  • heat up 5 tbs oil in a pan
  • add in thinly sliced onions in batches and fry until golden crisp
  • add 1 tsp sugar to keep the onions crisp throughout

 step2 : prepare masala



  • heat up 1 tbs oil
  • add in carrot and saute for 1 minute
  • add in capsicum and saute for 1 minute
  • transfer into a plate and keep aside
  • again heat up 1tbs oil
  • add in fennel seeds and saute for a while
  • now add in chopped ginger & garlic and saute until golden
  • add in green chillies followed by chopped onions
  • add in curry leaves
  • saute until the onions are soft
  • add in the sauteed carrot and capsicum and combine well
  • add in coriander powder, turmeric powder and red chilly powder
  • cook until the raw smell has gone
  • add in tomatoes and cook until they are soft
  • add in coconut milk followed by pepper powder and garam masala
  • add in coriander leaves and mint leaves
  • cook until the gravy become slightly thick
  • adjust the salt level
  • add the halved  eggs and mix gently
  • masala is ready and keep this aside

 step 3 : prepare rice



  • heat up 2 tbs ghee in a heavy bottomed vessel
  • add in the spices and saute for a while
  • add in washed and drained rice and stir for 2 minutes
  • add in boiling water
  • add in salt to taste 
  • finally add lemon juice and mix well
  • cover it and cook on low medium flame until the entire water get absorbed

 step 4 : layering



  • spread 1 tbs ghee in a heavy bottomed vessel
  • spread 1/3 rice and fried onions, cashews and raisins
  • layer 1/2 of egg masala on top
  • again spread 1/3 rice and garnishing items
  • then spread remaining egg masala 
  • layer remaining 1/3 rice
  • sprinkle 1 tbs ghee on top
  • sprinkle the garnishing items
  • cover the vessel with a foil and lid
  • heat up an old tawa
  • place the biryani pot on the hot tawa
  • cook on low flame for 20 minutes and then turn off the flame
  • open the vessel after 10 minutes
  • yummy egg dum biryani is ready to serve

Easy Oats Apple Crumble


Ingredients :


  • apple - 4 large
  • oats - 1cup
  • sugar - 5 tbs
  • cold butter - 3 tbs
  • cinnamon powder - 2 tsp
  • lemon juice of half of a lemon
  • lemon zest - 1 tsp

 Method


  step 1 : prepare apple filling


  • peel and cut the apples into thin slices
  • in a bowl mix together sliced apples, 3 tbs sugar, 1 tsp cinnamon powder, lemon zest and lemon juice
  • keep this aside

 step 2 : prepare oat mix



  • in a separate bowl add in the oats
  • add in 2 tbs sugar, 1 tsp cinnamon powder, and the butter
  • crumble this mix with hands

 step 3 : baking



  • preheat the oven at190 degree centigrade for 10 minutes
  • transfer the apple mix into an oven proof dish
  • spread the oat mix on top
  • bake this at 190 degree centigrade for 40 minutes or until the oats are golden and the apples are soft

Pasta in White Sauce Recipe | White Sauce Pasta Recipe | पास्ता बनाने की विधि



White Sauce Pasta


White sauce pasta is extremely easy to make.Whenever make pasta,try use durum wheat pasta. Durum wheat is a variety of wheat which has higher protein and gluten content. However you can use any pasta according to your preference.

Ingredients :

 pasta - 1cup( I used penne pasta)
carrot - 1/4cup( finely chopped)
capsicum - 2 tbs ( finely chopped)
garlic chopped - 1/2 tsp
milk - 1.5 cups
maida/ plain four - 1 tbs
butter - 2 tbs
chilly flakes - 1/2 tsp
pepper powder - 1/2 tsp
oregano - 1/2 tsp
nutmeg powder - 1/2 tsp

Method

step 1 : cooking pasta


  • boil 4 cups of water
  • add in enough salt
  • add in pasta into the boiling water
  • cook the pasta for approx.10 minutes or until al - dente ( cooked but not very soft)
  • then drain and keep aside

 step 2 : cooking vegetables

  • heat up 1 tbs butter
  • add in garlic and saute until golden
  • add in carrot and saute on high flame for 1 minute
  • add in capsicum and cook on high fame for 1 minute
  • add in salt, chilly flakes and pepper powder as needed
  • transfer the cooked vegetables into a plate and keep aside

step 3 : preparing white sauce ( keep the flame on low while preparing white sauce)

  • heat up 1 tbs butter
  • add in the flour and stir continuously until a paste forms
  • again cook for 2 minutes
  • add in the milk gradually and stir continuously with a whisk
  • cook this until the mixture starts to thicken
  • it may take around 4 -5 minutes
  • add in salt,chilly flakes, oregano, nutmeg and pepper as needed
  • now add in the cooked vegetables and pasta
  • mix well and serve hot
  • grate some cheese if you like

 Notes :

  • Use vegetables of your choice
  • White sauce pasta get thickens as it cools down. Therefore serve them when they are still hot.

Nurukku Gothambu Payasam Recipe | Sooji Gothambu Payasam | Broken Wheat Kheer



Broken Wheat Payasam

 This is a simple and tasty desert which can be prepared at any special occasions.In this recipe, I have added a special ingredient- condensed milk. Adding condensed milk is completely optional, but this will definitely give an awesome taste to your payasam.
 I have cooked the wheat in pressure cooker. Make sure that the wheat is cooked very well. There is no need to drain the excess water, if any.

Ingredients :


  • broken wheat - 1 cup (250g) 
  • jaggery - 1+3/4 cup (350g)
  • ghee - 4 tbs
  • cashew nuts - 3tbs
  • thin coconut milk - 5 cups
  • thick coconut milk - 3 cups
  • raisins - 1 tbs
  • cardamom powder - 2tsp
  • sweetened condensed milk - 1/2 cup (optional)

Method


  • add in washed and drained broken wheat into a pressure cook for one whistle; then reduce flame and cook on low flame for 3 minutes more
  • meanwhile melt jaggery in 1/2 cup of water; then strain to remove any impurities & keep aside
  • open the cooker after 30 minutes (once the pressure released)
  • now add in the jaggery syrup and 2 tbs ghee
  • cook on medium high flame for about 15 minutes
  • stir at regular intervals 
  • make sure that the jaggery syrup has reduced considerably
  • now add in the thin coconut milk and cook on medium high heat for about 15 minutes
  • once the mixture got thickened enough add in thick coconut milk
  • bring this mixture to a good boil
  • now reduce flame to low and add in  condensed milk and cardamom powder 
  • mix well and turn off the flame
  • heat up 2 tbs ghee and fry cashew nuts until golden
  • then add in raisins and fry until they puff up
  • add this mix into the payasam along with ghee
  • mix well and serve warm

Oatmeal Cookies

 Ingredients :


  • oats - 1+1/2 cup
  • all purpose flour/maida - 3/4 cup
  • chocolate chips -1/3 cup
  • sugar-3/4 cup
  • cinnamon - 1"(you can use cinnamon powder instead)
  • softened unsalted butter - 1/2 cup
  • baking soda - 1/2 tsp
  • salt - 1/4 tsp
  • egg - 1
  • vanilla essence - 1/2 tsp

  Method



  • line a baking tray with butter paper and keep aside
  • mix together all purpose flour, salt and baking soda and keep aside
  • powder sugar and cinnamon into a fine powder
  • in a mixing bowl cream together sugar and butter until cremy and fuffy
  • add in egg and vanilla essence and whip until well combined
  • sift in the flour mix into  this
  • mix gently; avoid over mixing
  • now fold in the oats and chocolate chips
  • using a table spoon scoop the cookie dough into the prepared tray
  • leave 1.5 inch distance between the cookies as they will spread while baking
  • bake them in a preheated oven at 190 degree celsius for 9 - 10 minutes
  • allow them to cool competley 
  • once they are cool store in an airtight container
