Whole Wheat Lemon Cake
Ingredients :
- wheat flour - 1 cup
- baking powder - 1tsp
- salt - a pinch
- butter at room temperature - 1/2 cup
- sugar - 3/4 cup
- eggs - 2
- lemon zest - of 2 large lemons
- curd/yogurt - 2 tbs
Method :
- Mix together wheat flour, baking powder and salt. Keep this aside.
- cream together butter and sugar until pale yellow
- add in the eggs one at a time and beat until well combined
- add in lemon zest and combine well
- sift in the flour mix
- fold in gently;avoid over mixing
- add in curd and mix gently
- transfer this cake batter into a cake tin which is lined with parchment paper
- bake this in a preheated oven at 180 degree Celsius for 45 - 50 minutes or until a toothpick inserted at the centre came out clean
- brush the top with lemon syrup
- cut the cake when it is completely cool
to make lemon syrup :
- mix 3 tbs sugar, 1 tbs lemon juice and 1/4 cup of water;boil this until get a syrup consistency.
to zest the lemon :
- grate the yellow part of lemon skin
Thank you for this wonderfully easy recipe. I was worried because the mixture was rather thick but it turned out light and very airy. I did cut the sugar and no one complained. Matter of fact, it was such a hit that I'm going to make it again...today!
