Banana flower - Cow pea Stir fry
Ingredients:
- Banana flower (kodappan) 1 (finely chopped)
- Cow pea (vanpayar) 1 cup (soak for 8 hours)
- Shallots 4
- Garlic 5 cloves
- Turmeric powder 1/2 tsp
- Chilli flakes 2 tsp
- Curry leaves 2 sprigs
- Pepper powder 1 pinch
- Mustard seeds
- Salt
- Coconut oil
- Pressure cook soaked pea along with salt
- Keep this aside
- Heat up some coconut oil and crack mustard seeds
- Add crushed shallots and garlic, and curry leaves
- Stir until the shallots turn golden
- Add turmeric powder and chilli flakes
- Stir for a few seconds
- Add chopped banana flower
- Stir well, add salt as needed
- Cook covered on low flame for 2 minutes
- Add in cooked pea and mix well
- Sprinkle some pepper and coconut oil
- Turn off the heat
- Nutritious banana flower - cow pea stir fry is ready to serve
