Ingredients
- Butter 150g (10 tbs)
- Sugar 250g (1.25 cups)
- Cocoa powder 80g (1/3 cup+2tbs)
- Maida 1/2 cup (65g)
- Eggs 2
- Pinch of salt
- Vanilla essence 1 tsp
- Instant coffee powder 1/2 tsp
- Raisins 30g
- Cashews 50g
- Combine butter, sugar, salt, coffee powder and cocoa powder in a heat safe bowl
- Boil some water in a sauce pan
- Place the bowl over the sauce pan
- Stir till the butter has melted
- Remove the bowl from the saucepan and allow the mix to cool
- Add the eggs one at a time stirring thoroughly after each addition
- Add in vanilla and flour to the mixture and stir gently until just combined.
- Add the nuts and raisins
- Pour this into a 7"square tin lined with baking paper
- Bake at 170 degree Celsius for 25 - 30 minutes
- Take out from the oven and allow the brownie to cool down completely
- Cut into small squares and serve.
