Soft Pathiri Recipe
Ingredients:
- roasted rice flour - 1 cup
- water - 1+3/4 cup*
- salt as needed
- oil 1tsp
Method
step 1 : make dough
- boil 1+3/4 cup of water along with salt and oil
- add in the flour into the boiling water, stirring continuously
- mix very well
- turn off the flame and keep it covered for 5 minutes
- then knead the dough for 10 minutes to make it smooth
- pathiri will be soft if you knead the dough still it is hot
- divide the dough into balls of desired size
- press the balls in a greased pathiri press or roll out into thin circle using a rolling pin
step 2 : cook pathiri
- heat the tawa on medium high heat
- place the shaped pathiri on it
- when seam appear on top flip it
- cook for another 30 seconds or small bubbles appear on top
- turn it again and cook it until puffy
- do not allow it to burn; pathiri should be white in colour
- repeat the same with the remaining dough
- serve them hot with your favourite curry
- if not serving immediately keep them in a casserole to keep them warm and soft
Note:
- I used homemade rice flour for this recipe; the amount of water needed may vary depending on the type of flour
