Soft Idli
Idli with roasted flour?? Yes..You can make cotton soft idli with roasted rice flour..
Ingredients :
- roasted rice flour - 1 cup
- urad dal - 1/2 up
- salt & water
Method :
- wash the urad dal very well and soak for 2 hours
- I prefer ball type urad dal to split one
- and I'm using the blender jar to grind the soaked dal
- grind the soaked dal along with 1 cup of water into a fine paste
- grinding of dal is very important, take your own time
- pour it into a deep vessel
- add 1 cup of roasted rice flour into it
- add in 1 .5 cups of water and mix well
- grind them together once more to remove lumps if any
- the amount of water is very important ( I used 2.5 cups of water in total )
- now the batter will be very thin, but it will get thickened as it sits
- if the batter is too thick, proper fermentation will not occur
- keep it covered in a warm place for fermentation ( 10 - 12 hours )
- once it is fermented you can see numerous tiny bubbles in the batter
- this batter yields 18 - 20 idlis
- now add in enough salt and mix gently without disturbing the bubbles
- place the greased idli tray in the steamer
- pour the batter into the pits
- cover the steamer and cook on medium flame for 8 - 10 minutes
- now take out the tray from the steamer and allow them cool for 5 minutes
- after 5 minutes you can remove the idli from the tray using a spoon, without sticking to the sides
- cotton soft idlis are ready to serve
