Easy Fluffy Pancake
Ingredients :
For cake base:-
- all purpose flour / maida - 3 tbs (I used homemade maida for this recipe)
- egg yolk - 1
- sugar - 1tsp
- warm milk - 2tbs
- oil - 1tbs
- vanilla essence - 1/2 tsp
- baking powder - 1/3 tsp
- a pinch of salt
For meringue:-
- egg whites - 2
- sugar - 1tbs
Method
cake base
- add egg yolk into a bowl
- add in sugar and combine well
- add in milk and oil little by little and combine well
- add in vanilla essence and salt
- sift in flour and baking powder and mix well
- this will be a sticky batter; keep aside
meringue
- add 2 egg whites into a bowl
- beat on low speed until frothy
- add in 1/2 tbs sugar and beat well until shiny
- add in remaining 1/2 tbs sugar and beat until stiff peaks are formed
mixing
- add the meringue into the cake base in three batches and mix gently
cooking
- heat up a non stick pan
- grease well with oil
- pour the batter with a ladle, do not spread
- cook it covered on low flame (about 3 minutes)
- when one side is golden flip it
- cover and cook the other side also ( about 1 minute )
- repeat the same with the remaining batter
- serve with butter and honey
