കപ്പലണ്ടി മിട്ടായി ( കടല മിഠായി ) പെര്‍ഫെക്റ്റായി എളുപ്പത്തില്‍ വീട്ടില്‍ത്തന്നെ ഉണ്ടാക്കാം | Kappalandi Mittai | Kadalai Mittai Recipe


Ingredients:
  • Roasted peanut 1 1/2 cups (250g)
  • Jaggery 200g
  • Ghee 2 tsp
  • Vanilla essence 1/4 tsp
 Method:
  • Add jaggery to a saucepan
  • Add 1/4 cup
  • Heat up melt jaggery
  • Filter the syrup and transfer to a heavy bottomed pan
  • Boil the syrup till it reach soft crack stage*
  • Add peanut and mix well
  • Transfer to a greased tin
  • Level the mix
  • Allow to cool down completely
  • Once cool cut into pieces and enjoy
* To check the consistency, drop a little syrup to a bowl with water; The first stage will be soft ball stage. This is not the stage what we are looking for. Continue heating and repeat checking by dropping syrup to water. When it reach hard ball stage, it will hold its shape but will not be brittle. Continue to cook for a little while .When it reaches the right consistency, it will harden immediately when drop into the water and forms a brittle. If you have a thermometer, heat the syrup till it reaches a temperature of 135 degree Celsius.

ഡിങ്കിരി ഡോൽമ | Dhingri Dolma Recipe


Ingredients;
  • Mushroom 200g
  • Paneer 180g
  • Onion 1
  • Tomato 1
  • Green chilli 2
  • Ginger a small piece
  • Garlic 5 cloves
  • Chilli flakes 1/2 tsp
  • Turmeric powder 1/2 tsp
  • Garam masala 1/2 tsp
  • Coriander leaves
  • Cumin 1/4 tsp
 Method:
  • Heat up oil in a pan
  • Add cumin followed by onion and green chilli
  • Stir and cook till onions turns golden
  • Add chopped ginger and crushed garlic
  • Add mushrooms and cook for 4-5 minutes
  • Add salt
  • Add tomato and cook for 2 minutes
  • Add chilli flakes, turmeric powder and garam masala
  • Add grated paneer and cook for 2 minutes
  • Finally add coriander leaves and serve hot

തേങ്ങാ ചേർക്കാതെ നല്ല പാലപ്പം ഉണ്ടാക്കാം | Palappam Recipe


Ingredients:
  • Roasted rice flour 2 cups (400g)
  • Sugar 3 tbs (45g)
  • Salt 3/4 tsp
  • Instant yeast 1 tsp
  • Milk powder 3 tbs (30g)
 Method:
  • Take 3 tbs rice flour to a heavy bottomed vessel
  • Add 1 1/2 cups of water to this
  • Stir and cook this until thickened
  • To this add sugar , salt and 2 cups of water
  • Check the temperature of the mix
  • If the mix is warm enough add yeast and rice flour
  • Mix well
  • Add milk powder
  • Add 1 cup of water and mix well
  • Transfer this to a mixer jar and grind  for a few seconds
  • Transfer to a big vessel
  • Cover and set aside for fermentation (1 1/2 - 2 hours)
  • When batter is ready, pour enough batter to appachatti and cook for 2 minutes
  • When the edges become light golden color, remove from pan
  • Serve appam with favorite curry
