Basbousa Recipe
Basbousa is a Middle Eastern sweet cake soaked in sugar syrup.
Ingredients :
for cake batter
- semolina/rava - 1 cup
- all purpose flour/maida - 1 cup
- desiccated coconut - 1/2 cup
- curd/yogurt - 1 cup
- vegetable oil - 3/4 cup
- lemon zest of 1 lemon
- eggs - 3
- powdered sugar - 1 cup
- baking powder - 1 tsp
- salt - a pinch
for sugar syrup
- sugar - 3/4 cup
- water - 1 cup
- lemon juice - 1 tbs
Method
step 1 : prepare cake tin
- grease a cake tin with oil, I used a rectangle tin, you can cake tin of any shape
step 2 : preheat the oven
- preheat the oven at 180 degree Celsius
- you can bake this cake in stove top also
step 3 : prepare cake batter
- into a mixing bowl combine sugar and eggs
- then add in coconut, semolina and curd
- mix well
- now sift in flour, baking powder and salt
- mix in gently
- transfer this batter into the prepared tin
step 4 : baking
- bake this in the preheated oven at 180 degree Celsius for 40 - 45 minutes
step 5 : prepare sugar syrup
- while the cake is baking, prepare sugar syrup
- add in sugar and water in a sauce pan
- bring to boil until the sugar is dissolved
- add in lemon juice and boil this for another 2 - 3 minutes
- then switch off the flame and and allow the syrup to cool completely
step 5 : soaking
- when the cake is done remove it from oven
- make cuts of desired shape
- pour the cool sugar syrup over the hot cake
- let the cake sit for minimum 10 minutes
- then garnish with pistachio, coconut, cashew or almonds
- now you can serve this delicious super soft cake
