Mysore pak
Ingredients
- milk powder - 100 g ( 10 tbs )
- maida - 2 tbs (20 g )*
- sugar - 300 g ( 1 1/2 cups )
- ghee - 150 g ( 1/2 cup + 2 tbs )
- oil - 150 g ( 1/2 cup + 2 tbs )*
- grease a 5x5 pan and line with parchment paper
- in a bowl mix together milk powder, maida and 3/4 cup of ghee - oil mix
- add sugar into a heavy bottomed vessel
- add 3/4 cup of water
- turn on the flame and stir until the sugar get dissolved
- now allow it to boil until it reaches one string consistency (boil for about 5 minutes on medium heat )
- you can check the stage of sugar syrup by dropping it in a bowl of water; when you drop a little syrup, if it dissolve immediately ,continue boiling; if the drop of sugar syrup settles at the bottom of bowl ,it is the correct stage.
- when the sugar syrup is ready add the milk powder - ghee mix in it and stir well until bubbles appear
- divide the ghee oil mix into 4 portions and add 1/4 portion of ghee - oil mix and stir well
- stir until the ghee get absorbed
- again add 1/4 of ghee - oil mix and stir until it got absorbed
- again add 1/4 portion and stir well
- now stir until the mix got a light golden shade ( about 5 minutes )
- now turn off the heat and add the remaining ghee - oil mix
- stir again for 2 minutes until
- now transfer into the prepared tin and level the top
- allow it to cool completely at room temperature
- when it is cool slice it and enjoy!
- instead of maida you can use roasted besan
- you can make this exclusively with ghee
